2019 Paratus Mt Veeder Cabernet Sauvignon

Tasting Notes

After a few swirls around the chalice, a deep whiff reveals a full-on olfactory assault - tastes of cherry liquor, dried fig, and fresh herbs prepared us for the first taste. The mouthfeel is elegant and velvety, the palate alive with more echoes of stone fruit and fresh sliced berries, the finish a satisfying blend of flavors, tannins and terroir that rings sonorously like an ancient steeple bell.

We paired the wine with a pork porchetta, well-seasoned and juicy from its own slow-rendered fat - delicious!

The 2019 will stand up to the big flavors of beef, pork and wild game while it is delicate enough to complement holiday sauces, roasted veggies and every variety of poultry

This is a grownup wine with many more seasons of growth ahead.
