2014 Paratus Mt Veeder Cabernet Sauvignon (.750L)
100% estate-grown Cabernet Sauvignon from the high elevation vineyards of Paratus.
Dark red fruits such as pomegranate, black cherry, and ripe cranberry greet the palate followed by notes of nutmeg, anise, and vanilla that linger on the finish. Even a hint of hibiscus is noted on the nose. This is a complete, balanced wine with elegant mouthfeel that will pair beautifully with roasted and grilled meats, herbed and vegetable-forward dishes, and of course a variety of cheeses. One of our finest vintages ever, Paratus, as the name suggests, is “ready.”
2014 presented a third straight year of perfect growing conditions in our Mount Veeder cabernet vineyards. A warm dry spring brought early bud break. Excellent conditions prevailed with the exception of one heat spike in late June. We were able to pick early with completely ripe and balanced fruit.
Winemaker Massimo Monticelli employed 11-day fermentation, three punchdowns daily during peak fermentation, and 18-day maceration, before pressing into 100% new French oak barrels. The wine was aged in barrel for 22 months.
