Despite all the weather-related events going on around the world and in our country, including heat waves, hurricanes and wildfires, this summer has been relatively quiet for us on Mt. Veeder. For this, we are grateful and knocking on wood. Even with the extreme drought conditions California is experiencing, we feel fortunate, having made the decision years ago to dry farm. It may sound illogical that not using irrigation is good for wine grapes. But after two decades of making the vines grow deeper roots to reach underground water sources, we can attest to its benefits of better resistance to weather variations, smaller berries yielding more intense flavors, and a more complex profile of fruit, tannins, and minerality.

Right now, vines are thriving with healthy canopies, average-sized, well-spaced clusters and steadily ripening grapes.

Keep Them Cool

While wine grapes do well withstanding heat and drought due to our farming practices, one can’t say the same of bottled wines. They do not fare well when exposed, even for a few hours, to extreme heat. Always store your wines in steady, cool temperatures, ideally in the 55-65 degree range. If ordering wines during these hot summer and early fall days, we strongly suggest selecting Air Shipping instead of Ground Shipping to protect your investment.

Chardonnay Bonanza

A cool, refreshing glass of Paratus Chardonnay is just the ticket for chilling out on a hot day. To help combat the heat, we are offering Paratus Club members an additional 15% off orders of three to five bottles of Paratus Chardonnay and an extra 30% off six bottles or more. That’s some serious savings, especially when you add these on top of existing club member discounts. Our 2019 Paratus chard is a high-elevation, no-oak beauty that is aged sur lie (on the lees) in stainless steel barrels. The lees are spent yeast cells that our winemaker chooses to leave unfiltered, giving Paratus Chardonnay increased body and complexity without the use of overpowering oak. The result is a crisp, full-bodied wine that sips refreshingly on a sunny afternoon and pairs like a dream with shellfish, salads, pastas and a variety of meats.

Although the lion’s share of our business is selling wines directly to you through our website and club, we also have important partners in fine wine shops and restaurants in California, New York, New Jersey, Illinois, Florida and Wisconsin. When you are out to dinner or poking around a wine shop, please ask if they feature Paratus on their lists and encourage them to carry us if they don’t already.Word of mouth is our best friend.
