Dark fruit - plum, blackberry, boysenberry – feature prominently in this beautifully well-rounded cab. Notes of anise, lavender and rose complement the deep fruit flavors. The Reserve is a bigger, more viscous wine with a silky, smooth structure that is “ready” now but is “prepared” to age for many years to come.
2014 presented perfect growing conditions in our Mount Veeder cabernet vineyards. A warm dry spring brought early bud break. Excellent conditions prevailed with the exception of one heat spike in late June. We were able to pick early with completely ripe and balanced fruit. The Paratus Reserve was selected from two prime mini-blocks in the higher elevations of the vineyard.
Winemaker Massimo Monticelli employed 11-day fermentation, three punchdowns daily during peak fermentation, and 18-day maceration, before pressing into 100% new French oak barrels. The wine was aged in barrel for 22 months. Three barrels were selected and set aside for the Paratus Reserve.
