The 2008 Paratus is showing its personality and terroir with big, dark-fruit flavor and Mount Veeder boldness, and tannins that are balanced and well integrated. The wine has a velvety elegance and fine finish indicative of its Paratus heritage. It is a beautiful wine with deep, dark color, a distinctive array of aromas, and a lush, luxuriant mouth of red stone-fruit, blackberry and cassis. This wine will age well for eight to ten years.

Food Pairing Notes
Excellent with grilled meats, roasts, wild game, pastas and stews. Pairs well with strong cheeses, olives, and nut meats. Try it with a carpaccio and arugula salad. Delish!
